So many possibilities....


Don't you love a recipe that has endless possibilities and is simple and easy? Tonight for dinner I made Mexican Chicken and Black Bean filling courtesy of Stolen Moments. Then the creative juices started to flow about what to do with the filling. We finally settled on Mexican Pita Pizzas. Holy Yum!! We spread the mixture on whole wheat pitas, topped with mexi blend cheese and popped in the oven for 8 minutes. Mmmmm, it was so good! This has just become my new go-to meal. Here are some more Stolen Moments ideas for this recipe:
  • Tacos or Burritos
  • Nachos
  • Quesadillas
  • Mexican Lasagna
  • Served over rice with shredded cheese on top
  • Mexican French bread pizzas
  • With scrambled eggs for breakfast burritos
  • Taco salad
  • Thinned with 1 can tomato sauce and 1 1/2 c. chicken stock, plus some extra spices and tortilla strips for a chicken tortilla soup
Seriously, try this! It won't disappoint!
